Cinnamon

Cinnamon is a rescue stray from Stamford, Connecticut. The shelter told my family that she was skiddish and extremely afraid of people; they also said her tail most likely was bitten off or cut off, which broke our hearts. We took her home in October 2009 and spent years earning her trust and helping her come out of her shell. She is such a gentle kitty with the tiniest meow! We're so lucky to have rescued her!

The tea on this page is named after Cinnamon.

The tea

Spiced properly, not sweetened into submission.

Assam underneath, then cardamom, star anise, cinnamon, clove, ginger and black pepper on top. The Assam is doing real work here — a chai built on a thin base tastes like spice in hot water, and this one does not.

It takes milk and sugar the way chai is meant to, brews into a concentrate for lattes, and is still good black if that is how you like it.

If it tastes good, it is good. These are guidelines, not gospel — start here and move whichever way your cup wants to go.

  • We'd start here

    Hot, with milk

    195°F, five minutes, then a splash of whatever milk you use. Sugar is traditional but entirely up to you.

  • As a latte concentrate

    Double the leaf, half the water, ten minutes. Strain it, then cut it about half and half with hot or steamed milk.

  • Over ice

    Make the concentrate above, let it cool, then pour over ice and top with cold milk. Better than an iced chai from most cafes.

If it's not right

Too weak
Add leaf before you add time. Past five minutes black tea gets bitter, not stronger.
Too bitter
Pull it a minute earlier, or use slightly less leaf. Water temperature isn't the culprit with black tea — it wants the full boil.
