Mundy

Mundy’s story began with hardship when he was found in a garage with a badly injured leg, but his spirit was never broken. After being rescued and given the care he needed, it turned out that his leg couldn't be saved. But Mundy quickly showed everyone that three legs were more than enough for running, playing, and demanding treats. Today, this resilient little cat reminds us every day that courage, love, and a second chance can make all the difference.

What it tastes like.

Grown high in the mountains of Antioquia, Colombia, this exceptional Chiroso natural coffee bursts with notes of grape jam, blueberry, and sweet florals. Its silky, mouth-coating body is balanced by bright citrus and green apple-like acidity, creating a cup that is both vibrant and refined. Complex, juicy, and intensely sweet, this coffee showcases why the rare Chiroso varietal has become one of Colombia’s most celebrated coffees.

Getting it right

How we'd brew Mundy.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start hereCold Brew

    Combine coarse grounds with cold water at roughly a 1:8 ratio and stir to saturate. Steep in the fridge for 18–24 hours, then strain through a fine filter and dilute the concentrate to taste.

  • Pour Over

    Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • French Press

    Add medium-coarse ground coffee to the carafe, pour in hot water (around 200°F), and stir. Let it steep for about 4-6 minutes, then press the plunger down slowly and serve right away. Grind finer for more strength.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
