Thuthan

Thuthan is a special kitty who had a rough start in life. This girl was born with a cleft lip, was declawed on all four paws, has a nub tail, and two collapsed ears. She was adopted then later found by the shelter on Craigslist abused, beaten, and dejected. Thankfully, Thuthan is living her best life with a human who cares for her, and she was even made famous on TikTok (check it out here)! Even though she's not perfect on the outside, we think she's purrfect to represent our less than perfect coffee!

What it tastes like.

This coffee is an Ethiopia Sidamo Natural Process--that means that the fruit of the coffee cherry was dried onto the bean, which leaves more delicious fruit notes, but also means that the coffee is nearly impossible to roast perfectly evenly. So the beans are less beautiful, but the taste is unlike any other! Notes of citrus fruits, blueberries, and a touch of floral flavors will hit your tongue in this deliciously complex coffee.

Getting it right

How we'd brew Thuthan.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start herePour Over

    Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • Cold Brew

    Combine coarse grounds with cold water at roughly a 1:8 ratio and stir to saturate. Steep in the fridge for 18–24 hours, then strain through a fine filter and dilute the concentrate to taste.

  • Espresso

    Pack finely ground coffee tightly into the portafilter and lock it into the machine. Aim for 1:3-3.5 ratio of coffee to espresso in 25-35 seconds. Grind finer to increase brew time.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
