Recipe: Pumpkin Cream Cold Brew

Fall is such a beautiful time of year. When I was growing up, I was homeschooled so summer didn't seem as exciting for me as it did for my peers. What I remember most about fall was that there are always so many fun things to do. It's a time for bonfires with friends, hayrides, cute sweaters, tasty treats, yummy hot drinks, staying up too late and sharing secrets with people you love (like your cat). Now that I'm a crazy cat mom, I've also learned that another wonderful perk of fall is that the cats get SO cuddly. Both of mine have long hair, so their beautiful winter coats are just starting to come in... oh it's just so sweet! All of this to say, fall is truly my favorite time of year.

In celebration of the first day of autumn, I wanted to share a recipe for a deliciously refreshing coffee drink!

Pumpkin Cream Cold Brew

Sure, this is a knock off drink from a certain *ahem* national chain of coffee shops. But if you can enjoy it at home for a fraction of the cost, why wouldn't you? Not to mention you can make this recipe over the weekend, and have enough to enjoy throughout the rest of the week! 

What you'll need:

1/2 Gallon of Brewed Cold Brew Coffee
--> Save yourself some heartache with our cold brew kit
--> Learn how to make cold brew with tools you already have at home here

For the cream:

1 cup half & half
1/2 cup Sugar (or sugar substitute)
2 TBSP Canned Pumpkin Puree (not pumpkin pie filling)
1 TSP Pumpkin Pie Spice 
1 TSP Vanilla Extract

Heat 1 cup half & half on medium low heat. Do not allow to boil, keep stirring with a wooden spoon. Add remaining ingredients, continuing to stir to combine. Use a fine mesh strainer to strain mixture. Store in a jar in the refrigerator for up to a week (or the expiration date of the half and half, depending on which comes first). 

Drink:

Fill a glass with ice. Pour cold brew over the ice, leaving some room for cream. Fill the remainder of the drink with cream to taste.
