Getting it right
How we'd steep Cinnamon's.
If it tastes good, it is good. These are guidelines, not gospel — start here and move whichever way your cup wants to go.
- Water
- 195°F
- Time
- 5 minutes
- Leaf
- 3g per 12oz
One sachet per 12 oz mug. No measuring, same numbers otherwise.

Hot, with milk
195°F, five minutes, then a splash of whatever milk you use. Sugar is traditional but entirely up to you.
As a latte concentrate
Double the leaf, half the water, ten minutes. Strain it, then cut it about half and half with hot or steamed milk.
Over ice
Make the concentrate above, let it cool, then pour over ice and top with cold milk. Better than an iced chai from most cafes.
If it's not right
- Too weak
- Add leaf before you add time. Past five minutes black tea gets bitter, not stronger.
- Too bitter
- Pull it a minute earlier, or use slightly less leaf. Water temperature isn't the culprit with black tea — it wants the full boil.
