Isabelle

Isabelle is our kitty. She is a beautiful sweet and fluffy Dollface Persian. We found her on Craigslist, and adopted her in the parking lot of an Ikea. She was so small, covered in fleas, and just as sweet as can be. She’s now grown, and her personality is empathetic and sweet, but, at 4am, you can find her zooming around the house, creating chaos that she can later blame on her sister, Nadia.

The coffee on this page is named after Isabelle.

What it tastes like.

Once upon a time when we were first starting our business, we were asked to brew cold brew for an event several states away. We had just created this blend for cold brew and we liked it, but we didn’t know if it was good enough for the masses yet. We brewed 100 gallons of cold brew for the event, and it turned out that less than 100 people attended. But, we somehow served over half of it because the people who were there just kept coming back for more. Since then, customers keep on raving about Isabelle’s Cold Brew Blend for its distinct chocolatey note and consistently smooth finish.

Getting it right

How we'd brew Isabelle.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start hereCold Brew

    Combine coarse grounds with cold water at roughly a 1:8 ratio and stir to saturate. Steep in the fridge for 18–24 hours, then strain through a fine filter and dilute the concentrate to taste.

  • Pour Over

    Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • Espresso

    Pack finely ground coffee tightly into the portafilter and lock it into the machine. Aim for 1:3-3.5 ratio of coffee to espresso in 25-35 seconds. Grind finer to increase brew time.

Start with 1 oz of coffee per 20 oz of near-boiling water

Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
