Getting it right
How we'd steep Seeking Representation!'s.
If it tastes good, it is good. These are guidelines, not gospel — start here and move whichever way your cup wants to go.
- Water
- 175°F
- Time
- 3-4 minutes
- Leaf
- 2.5g per 12oz
One sachet per 12 oz mug. No measuring, same numbers otherwise.
- We'd start here
Hot, in a mug
Do not use boiling water, use 175°F. Let the kettle stand a couple of minutes off the boil, then steep two to three minutes. Boiling water is the primary reason that green tea tastes bitter.
Over ice
Double the leaf, still use cooler water, three minutes, then straight over ice. Clean and sweet, and it does not need sugar.
A second and third steep
Greens have more than one cup in them. Go again for thirty seconds longer each time — three infusions from one spoonful is normal.
If it's not right
- Too weak
- Add leaf before you add time. Past five minutes black tea gets bitter, not stronger.
- Too bitter
- Pull it a minute earlier, or use slightly less leaf. Water temperature isn't the culprit with black tea — it wants the full boil.
