Meet the cat

Winks

Winks came into our lives in 2020 after surviving a severe infection that resulted in the loss of one of her eyes. We met her at the Idaho Humane Society while she was recovering from surgery, and it took only a moment to know she was the one we wanted to bring home. Having recently lost our beloved rescue dog, Buster, we believe Winks found us exactly when we needed her—and in many ways, she rescued us too. Today, she’s a sweet, quirky girl who loves pawing our faces in the morning, lounging in cat grass, and watching water disappear down the drain. Her favorite place is still the little loafer-shaped bed she had as a kitten, and seeing her now happily overflowing from it is a beautiful reminder of just how far she’s come.

The tea on this page is named after Winks.

The tea

The one you don't have to think about.

A blend of Indian and Ceylon black teas built for the first cup of the day rather than for contemplation. Medium body, enough malt to stand up to milk, and no rough edges when you inevitably leave the leaves in your cup.

If you are moving from a supermarket breakfast teabag to loose leaf, this is the softest possible landing.

You'll like it if
you want a straightforward morning tea that takes milk and sugar without complaining
Maybe not if
you are after something distinctive or unusual — this one is built to be reliable

Getting it right

How we'd steep Winks'.

If it tastes good, it is good. These are guidelines, not gospel — start here and move whichever way your cup wants to go.

Water
195°F
Time
5 minutes
Leaf
2.5g per 12oz

One sachet per 12 oz mug. No measuring, same numbers otherwise.

  • We'd start here

    Hot, in a mug

Infuser basket, water at 195°F, five minutes. Take the leaves out when you are done to prevent bitterness.

  • With milk

Give it an extra minute. Milk mutes a tea, so you want it brewed a little stronger than you would drink it black.

  • A second steep

Loose leaf only. Run the same leaves again a minute longer. Lighter and rounder — a different cup rather than a weaker one.

If it's not right

Too weak
Add leaf before you add time. Past five minutes black tea gets bitter, not stronger.
Too bitter
Pull it a minute earlier, or use slightly less leaf. Water temperature isn't the culprit with black tea — it wants the full boil.
