The tea

Soft, floral, and quietly sweet.

Vanilla and rose petals over a rooibos base, with a little cinnamon underneath to keep it from being purely floral. Delicate is the right word — this is a gentle cup rather than a bold one.

Caffeine-free, so it suits the end of an evening as readily as the start of a morning.

  • We'd start here

    Hot, in a mug

    Full boil, five to ten minutes. Rooibos teas are mild and pleasant, and will not turn bitter on you. So err long rather than short.

  • With a little milk

    Unusual for a herbal, but the vanilla and cinnamon take a splash of milk surprisingly well. Worth trying once before you decide.

  • Cold brew overnight

    Two heaping teaspoons in a pint of cold water in the fridge overnight, then strain. The rose comes forward when it is cold.

If it's not right

Too weak
Add leaf before you add time. Past five minutes black tea gets bitter, not stronger.
Too bitter
Pull it a minute earlier, or use slightly less leaf. Water temperature isn't the culprit with black tea — it wants the full boil.
