Meet the cat

Simba

Simba was the kitty of Zanetta’s grandmother. He was a beautiful and sweet Somali cat who struggled with health issues his whole life. Unfortunately, he passed away at a young age. But while he was on earth, he was a gentle soul who loved to be pet, sit on your lap, and be with his people.

The coffee on this page is named after Simba.

The coffee

What it tastes like.

We wanted to create a dark roast that we could truly be proud of. A coffee that still has character, that’s distinguishable from just another dark roast. The Simba’s Sumatra fits the bill with distinct complexity that hits your tongue, while still maintaining the smokiness that you crave from a dark coffee.

You'll like it if
you love a dark roast but want one with real character, not just smoke.
Maybe not if
you want a light, bright, fruity cup.

Getting it right

How we'd brew Simba.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start hereDrip

Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

  • French Press

Add medium-coarse ground coffee to the carafe, pour in hot water (around 200°F), and stir. Let it steep for about 4-6 minutes, then press the plunger down slowly and serve right away. Grind finer for more strength.

  • Pour Over

Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
