Meet the cat

Smokey

A tiny Smokey and her siblings were discovered in a box outside on a snowy evening in December 2017. She arrived at her forever home shortly afterward covered in fleas and very hungry! Today she lives with her two adoring parents and multiple rescue siblings (all are featured on their own Instagram page @eastoncathouse). Smokey answers to “Smokers”, “Razor Mittens”, “Princess Pink Nose”, and “Fluffy Pants”.

The coffee on this page is named after Smokey.

The coffee

What it tastes like.

Once upon a time, we did not roast dark roasts. And then people asked, and asked, and asked, and finally we gave in and created a dark roast we could be proud of. This coffee is designed to give you the smokiness and “oomph” of a dark roast, without the oily, bitter, aftertaste.

You'll like it if
you want the smokiness and oomph of a dark roast, without the oily, bitter aftertaste.
Maybe not if
you like a bright, fruity cup. This one goes the other direction!

Getting it right

How we'd brew Smokey.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start hereDrip

Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

  • French Press

Add medium-coarse ground coffee to the carafe, pour in hot water (around 200°F), and stir. Let it steep for about 4-6 minutes, then press the plunger down slowly and serve right away. Grind finer for more strength.

  • Espresso

Pack finely ground coffee tightly into the portafilter and lock it into the machine. Aim for 1:3-3.5 ratio of coffee to espresso in 25-35 seconds. Grind finer to increase brew time.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
