Meet the cat

Aurora

Aurora is a polydactyl calico, meaning she has extra toes on all of her paws. We adopted her from a rescue in Trenton, NJ when she was a year old. We were first drawn to her beautiful green eyes and then we noticed her mittens! She came home and immediately took over the house, despite the fact that our other two cats were older and bigger.

What it tastes like.

This delightful single origin coffee is an Ethiopia Yirgacheffe. Ethiopian Yirgacheffe is known for being exceptionally bright with distinct floral notes. We roasted it to a medium roast to emphasize berry and plum notes for a purrfectly delightful winter coffee!

Getting it right

How we'd brew Aurora.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start herePour Over

    Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • Drip

    Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

  • Cold Brew

    Combine coarse grounds with cold water at roughly a 1:8 ratio and stir to saturate. Steep in the fridge for 18–24 hours, then strain through a fine filter and dilute the concentrate to taste.

Start with 1 oz of coffee per 20 oz of near-boiling water

Add coffee before you add time. Longer brewing makes it bitter, not stronger.

Grind a little coarser, or let the water sit thirty seconds after it boils.
