Meet the cat

Gordo

We rescued him from a shelter in 2017 (shout out to Dakin Humane Society!). Gordo was a stray when the rescue found him, which was proven to us when he tried to fight our 2 year old's life-size opossum stuffy. He drools like a waterfall when he's happy and getting scratches. He's the best cat, though - he's the "momma cat" to our other two cats, Freya and Fen, and is great with our kiddo. Loves to cuddle, get snacks, and play with the magnetic letters on the fridge when they fall on the floor.

The coffee on this page is named after Gordo.

The coffee

What it tastes like.

This delightful coffee comes to us from Chiapas, Mexico. Finca Nuevo México is a family owned and operated farm located 1300 meters above sea level in La Concordia, Mexico. The multi generation family farm has been in operation since 1978, however, they’re currently in their first generation of producing coffee. The current owner truly takes pride in his work and it is evident that they pick only the best coffee cherries for your cup!

You'll like it if
you want a smooth everyday cup with caramel sweetness and a little fruit.
Maybe not if
you want a big, bold dark roast.

Getting it right

How we'd brew Gordo.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start herePour Over

Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • French Press

Add medium-coarse ground coffee to the carafe, pour in hot water (around 200°F), and stir. Let it steep for about 4-6 minutes, then press the plunger down slowly and serve right away. Grind finer for more strength.

  • Drip

Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
