Meet the cat

Jemi

After we lost Chloe (of Chloe's Christmas Blend), we were completely heartbroken. Our other cat, Zachie, missed Chloe and needed a friend. We adopted Jemi, and she has been a lovely addition to our home. She is a big time cuddler, and she and Zachie truly love each other.

The coffee on this page is named after Jemi.

The coffee

What it tastes like.

This cozy organic coffee wraps you in warmth with rich notes of dark chocolate, gentle smoke, and caramelized brown sugar in every sip. Smooth and comforting, it’s the kind of cup that feels right at home beside a crackling fire on a quiet evening.

You'll like it if
you want a cozy dark roast with dark chocolate and caramelized sweetness.
Maybe not if
you want something bright and fruity.

Getting it right

How we'd brew Jemi.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start hereDrip

Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

  • Espresso

Pack finely ground coffee tightly into the portafilter and lock it into the machine. Aim for 1:3-3.5 ratio of coffee to espresso in 25-35 seconds. Grind finer to increase brew time.

  • French Press

Add medium-coarse ground coffee to the carafe, pour in hot water (around 200°F), and stir. Let it steep for about 4-6 minutes, then press the plunger down slowly and serve right away. Grind finer for more strength.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
