Mushi

From Mushi's Mom: Mushi was adopted at a local shelter when he was 1 month old. I was told that he was abandoned at merely 2 weeks of age. When I adopted him, I had no idea that he was developing a rare and life-threatening fungal infection on his leg and tail, likely from contamination at a swamp. About 6 months old, all anti-fungal and other medications stopped working, and he was losing blood fast. I made the decision then to have his hind leg and tail amputated. I didn't know about his life expectancy at that point, but THANK GOD the fungus was only localized and did not disseminate into his bloodstream. So now, he's a happy 4.5 year old healthy kitty living his best life. He is able to jump higher and run faster than my other 4-legged cat. He is super needy and friendly towards humans. I'm glad I took a chance with him because he is one of my greatest joys.

What it tastes like.

This special lot comes to us from the Women Coffee Extension (WCE) at the Mbizi Coffee Washing Station. Founded in 2017 by Aline Christine and Odette Uwamariya, the WCE is a women’s coffee cooperative focused on creating a space for female specialty coffee producers to have a stronger voice in Rwanda coffee production. As a woman owned business, we're excited to offer this delightful coffee to our line up!

Getting it right

How we'd brew Mushi.

Our philosophy? If it tastes good, it is good. These are some of our guidelines for how to get a great cup, but don't treat them as gospel. Treat them as a suggestion.

  • We'd start herePour Over

    Place a filter in the cone, make sure to pre-wet the filter. Add medium-fine grounds, and wet them with a small amount of hot water to bloom for 30 seconds. Pour the rest of the water in slow, spiraling circles over 2–3 minutes and let it drain through.

  • Drip

    Add medium grounds to the machine's filter basket, fill the reservoir with cold water, and hit start. The machine heats the water and drips it through the bed automatically, usually in about 5 minutes. If brew time is too fast, grind finer or add more grounds.

  • Cold Brew

    Combine coarse grounds with cold water at roughly a 1:8 ratio and stir to saturate. Steep in the fridge for 18–24 hours, then strain through a fine filter and dilute the concentrate to taste.

Start with 1 oz of coffee per 20 oz of near-boiling water

Too weak
Add coffee before you add time. Longer brewing makes it bitter, not stronger.
Too bitter
Grind a little coarser, or let the water sit thirty seconds after it boils.
